I grew up in Canada where they still have the original Oh Henry chocolate bar. I love anything with oatmeal and peanut butter.

The original recipe calls for a 9X13 inch pan but I prefer using my 10X10 inch square pan as it fits into my combination microwave/convection oven. I have had a combination unit for more than 30 years and I love having a second oven.

The original recipe doesn’t have peanut butter in the crust and no peanuts on top. When I first made the recipe it had peanut butter mixed in the chocolate topping. I found the topping sticky and loose when the bars got warm. I prefer a harder chocolate topping so I changed it to just the chocolate and peanuts.

Now onto the bars…
2/3 cup butter, melted
1 cup brown sugar, lightly packed
2 tsp vanilla extract
1/2 cup light or dark corn syrup
2/3 cup peanut butter
4 cups of oatmeal (I only have the Old Fashioned kind)

For the topping
1 cup chocolate chips
2 cup peanuts, very roughly chopped

Mis together all the wet ingredients in a bowl until well mixed, then add in the oatmeal and coat it completely. Press into a prepared pan (I spray with PAM) and bake at 350˚F for 12 minutes. It will be soft and bubbly but will cool quickly.

Melt together the peanut butter and chocolate chips in the microwave or over a water bath. Stir in the peanuts and spread the mixture over the cooled bars. I store mine in the fridge as the topping is pretty soft due to the added peanut butter.
