Hello Chickens! Today we’re going off-script … I’ve got a savory dish for you, a true family favorite. And, our guest Chicken is one of my favorite peeps … and our first gentleman Chicken …Dennis Prodan!
In our family there are 8 grandchildren. The first 4 came very close to one another and then, after a 4 or 5 year gap, the next 4 arrived (I’m in the younger group). We cousins spent a lot of time together! Summer vacations, ski trips, Chinese New Year and Grey Cup parties. Dennis is my cousin-in-law and we met 40 years ago. Of course, we younger cousins could be … let’s say charming (that’s what you’d say, right Dennis?) … and we’d tease and giggle as the older foursome started to bring home boy- and girlfriends. Poor Dennis … we really tormented him. But, he got his revenge many times (more stories to come).
As a young adult, I got to spend more time with Dennis. He and Cindy have two fantastic young men and all 4 have a wonderful sense of humor. Here is the first of 4 recipes to come from Dennis … next time, I promise some stories from the 80’s (ouch!). In the meantime, this recipe for Baked Beans is a family favorite. I remember my Grandma, Mom and aunts making big batches of these beans. They are even better the next day and, if I remember correctly, they freeze beautifully. For your next big family BBQ, give these a try.

Baked Beans
1 lb. bacon, cooked and chopped
1 large onion, chopped
1 can kidney beans
1 can lima beans
2 cans pork & beans
3 tablespoons brown sugar
3 tablespoons BBQ sauce
½ cup ketchup
1. Mix all ingredients together. Let stand in refrigerator for at least 6 hours.
2. Bake at 350F for 35 minutes.
Note from Dennis: This recipe can easily be modified and adjusted to taste. Consider adding different types of canned beans. More bacon is always a good thing. Double or triple the recipe. It’s great as a leftover. It improves with age … just like Shelley (that’s me!).
