I read a lot of harlequin romance novels as a teenager and I learned a LOT! It seemed that if you wanted the man you had better be a bold, voluptuous baker with a sketchy past. Now there’s a recipe for getting that man to the altar! Fast forward 20+ years (that was painful to write) and I still find myself expressing my love for my husband through food. Specifically baking. But do you know that if you replace the “a” in baking with an “i” you get “Biking!”. The other woman in my relationship.

Now it’s eating healthy, racing weights and no cookies (damn their delicious refined sugars!) How does he know I love him when I can’t bake for him? Sure I could just say it “ I love you!” l could feed him his salad while gazing deeply into his eyes. “ I love you!” Draw hearts in the dew on his water glass! “ I love you!” But no! It was ingrained at an impressionable time in my life…..to bake, bake, bake for him is to love, love, love him! Damn it I need to bake!  Thus a recipe was born: Mint Cycle-A-Lot Chip Waffle Cookies. Take that Biking! PS I like to run which is far more difficult an exercise as you can’t coast down the hills! Giving up baking for biking…silly…running so you can eat cookies….WIN!

Mint Cycle-A-Lot Chip Waffle Cookies

Part 1- Cream together:
1 cup coconut oil
1 banana
1/2 cup brown sugar

Part 2 Add to above and mix until thoroughly incorporated
2 eggs
1tsp of vanilla
1/2 tsp of peppermint extract

Part 3 Mix together until combined and then add to above.
3 cups of flour ( 2 cups whole wheat and 1 cup all purpose)
1 heaping tsp of baking soda
1 heaping tsp salt
1 cup chocolate chips

Here’s the fun part: warm up your waffle iron to medium setting ( thank you Pioneer Woman for your episode on dorm room dining). Take 8-1 inch dough balls and place them evenly in your hot iron, close the lid ( I set a timer for 2 minutes 30 seconds or you can use the iron’s chime). Repeat until dough is gone. Makes 48 cookies. The cookies will be crunchy on the outside and soft and doughy in the centre. These cookies keep well on the counter unless you have children, or you can freeze them ( They are just as good frozen!)

Temptation Level: 10 out of 10!!!  I love the texture and taste.  I find that they aren’t overly sweet.  Also, please note that running is ridiculous and biking rules.- Cycling Husband
