I have always been a fan of peanut butter and peanut butter cookies. My good friend hosted a neighborhood Christmas cookie exchange and I discovered peanut butter cookies with a chocolate kiss in the center. Well I took it one step further and I use a mini Reese’s Peanut Butter Cup pressed into the center of a hot baked cookie. Just enough chocolate and the second hit of peanut butter is sublime. Enjoy!!

Peanut Butter Blossoms

1 3/4 cups flour
1 tsp soda
1/2 tsp salt
4 ounces (1 stick) butter at room temperature
1/2 cup smooth peanut butter
1/2 cup white sugar
1/2 brown sugar
1 large egg
1 tbsp milk
1 tsp vanila
bag of mini Reese’s Peanut Butter Cups

1. Sift together flour, soda and salt.
2. Cream together butter, peanut butter, and both sugars.
3. Add egg, milk and vanilla and beat until well blended.
4. Add flour and mix in thoroughly.
5. The dough can be baked right away or chilled in the fridge for an hour.
6. Preheat oven to 375F. Prep your cookie sheets (PAM, Silpat, or parchment paper).
7. Roll dough into 1 inch balls (I use a small ice cream scoop to get them the same size).
8. The balls can be rolled in some white sugar but I don’t do this step.
9. Bake for 8-9 minutes .
10. Remove from oven and gently press a mini peanut butter cup into the center of each hot cookie. The heat will soften the peanut butter cup. Alternatively you can use chocolate kisses but I much prefer the peanut butter cup center!!

Sometimes I freeze half of the balls and bring them out when I am cooking dinner in the oven and surprise my family with a few freshly baked cookies.
