Tonight’s dinner was comfort food … a rich beef stroganoff … and I needed an accompaniment. I love to make biscuits and I tend to go to my @redlobster mix (so buttery and garlicy). I found a lovely Baking Powder Biscuit recipe in my fave cookbook so thought I’d give them a try.

I remembered that the very first thing I learned to cook in home economics at school were baking powder biscuits. I didn’t ever remember my Mom making these biscuits and so I felt really proud to bring home a new “delicacy”!

This recipe … compliments of Catherine Yoder of Bertha, Minnesota … definitely do not disappoint. They are flaky and a wonderful side, served warm with butter. With 3 teaspoons of baking powder, there was a nice rise that also make them fluffy. These mix up very quickly – enjoy!

Baking Powder Biscuits
2 cups all-purpose flour
2 tablespoons sugar
3 teaspoons baking powder
½ teaspoon salt
½ cup shortening (I used salted butter)
1 egg
2/3 cup milk

1. In a large bowl, combine the flour, sugar, baking powder and salt. Cut in shortening until mixture is crumbly. Beat egg and milk; stir into dry ingredients just until moistened.

2. Turn dough onto a lightly-floured surface; roll out to ½” thickness. Cut with a floured 2 ½” biscuit cutter. Place 1” apart on an ungreased baking sheet.

3. Bake at 450F for 10-12 minutes or until golden brown. Serve warm.

I have to confess is that I was scared off by the baking temperature and time. I use very dark colored cookie sheets and I worried that at such a high temperature, the biscuit bottoms would burn very quickly. So, I turned the oven down to 375F and baked them for 15 minutes. They were a perfect golden brown, top and bottom.
