Hello Chickens! Today we’re baking some good ‘ol comfort food …biscuits! I know there are a million biscuit recipes out there and every one of them is easy and delicious.

I love comfort food … who doesn’t?! We all have our favorite go-to recipes that bring us back to a special memory and time in our lives. My comfort recipes always come from my Mom’s recipe box and are usually soups or stroganoff … something hearty and rich that makes you feel warm and loved on the inside. And they all pair beautifully with biscuits. Today’s basic recipe comes to us from Jean Parsons of Sarver, Pennsylvania.

Buttermilk Biscuits
2 cups all-purpose flour
1 tablespoon sugar
1 teaspoon baking powder
½ teaspoon salt
½ teaspoon baking soda
¼ cup shortening (I used cold butter)
¾ cup buttermilk

1. In a large bowl, combine the flour, sugar, baking powder, salt and baking soda. Cut in the (butter) until mixture is crumbly. Add buttermilk; stir just until the dough clings together.
2. Turn dough onto a lightly-floured surface; knead gently 10-12 times. Roll out to ½” thickness. Cut with a floured 2 ½” biscuit cutter. Place 1” apart on a greased baking sheet.
3. Bake at 450F for 11-12 minutes or until lightly browned. Serve warm.

I have to confess … I really need to work on my rolling pin skills! I didn’t roll these out very evenly so had some that were thinner than others. Bottom line – they were still easy to whip up and delicious. Nothing compliments a good soup better than a warm biscuit with melted butter. My boys ate them up so quickly, there were none left for Norma to sample. Next time, Norms!

Now don’t forget, Chickens … you can easily make your own buttermilk. For each cup of buttermilk needed, start by putting 1 tablespoon of white vinegar or lemon juice into your measuring cup and top it up with milk. Let sit for 5 minutes and voila … you have buttermilk!
