Have you ever met a cookie you didn’t LOVE? I know I haven’t! Growing up, we always had fresh cookies and Mom stored them in a monkey-shaped cookie jar. We tried to sneak cookies and the challenge was to get the monkey’s head off without Mom hearing us! I was never that good at it! Geez, that cookie jar is 60 years old … it was a wedding shower gift for my Mom back in 1960. My brother and his family have the monkey now and it always makes me smile when I see it in their kitchen.

I flipped past this recipe many times while choosing my weekly bake for the Chickens. I thought it would be too ordinary or boring. But … thank you Cindy Utter of Jacksonville, Illinois … this recipe is a game changer! I realized I’d only ever used the recipes on the chocolate chip or oatmeal bags. I’ve never made a true homemade chocolate chip cookie. And this one is divine!

Chocolate Chip Cookies
1 cup butter, softened
1 cup shortening
2 cups packed light brown sugar
1 cup sugar
4 eggs
4 ½ cups all-purpose flour
2 teaspoons baking soda
2 teaspoons salt
2 cups semisweet chocolate chips
1 cup chopped pecans

1. In a large mixing bowl, cream the butter, shortening and sugars until light and fluffy. Beat in eggs and vanilla. Combine the flour, baking soda and salt; add to creamed mixture and mix well. Stir in chocolate chips and nuts (dough will be slightly sticky).
2. Drop by tablespoonfuls 2” apart onto greased baking sheets. (Note – I didn’t grease my baking sheets).
3. Bake at 350F for 10-12 minutes or until lightly browned. Remove to wire racks to cool.

With 2 teaspoons of vanilla, this cookie has great flavor. Crisp on the outside yet soft too. And a single batch makes a lot of cookies! I was able to fill our cookie jar, give some to Norma and still have enough to freeze. This is my new go-to recipe for chocolate chip cookies. Delish!
