I have fond memories of my Grandma’s cinnamon buns … all gooey and loaded with cinnamon … we ate them fresh from the oven.

I am working up my courage to cook with yeast! I don’t know why I’m so afraid of it but I have promised myself to tackle a sweet and savory yeast creation. Because of this bizarre fear, I’ve made a lot of quick breads of all varieties. And today I was delighted to find this recipe for Cinnamon Swirl Quick Bread, with thanks to Helen Richardson of Shelbyville, Michigan.

Cinnamon Swirl Quick Bread
2 cups all-purpose flour
1 ½ cups sugar, divided
1 teaspoon baking soda
½ teaspoon salt
1 cup buttermilk
1 egg
¼ cup vegetable oil
1 tablespoon ground cinnamon

GLAZE:
¼ cup confectioners’ sugar
1 ½ to 2 teaspoons milk

1.     In a large bowl, combine the flour, 1 cup sugar, baking soda and salt. Combine the buttermilk, egg and oil; stir into dry ingredients just until moistened. In a small bowl, combine the cinnamon and remaining sugar.

2.     Grease the bottom only of a 9”x5”x3” loaf pan. Pour half of the batter into pan; sprinkle with half of the cinnamon-sugar. Carefully spread the remaining batter and sprinkle with remaining cinnamon-sugar; swirl a knife through batter.

3.     Bake at 350F for 45-50 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack to cool completely.

4.     For glaze, combine confectioners’ sugar and enough milk to achieve drizzling consistency. Drizzle over bread.

The bread has a lovely consistency with the added bonus of the cinnamon-sugar swirl running through the middle of it. I’ve made this twice now and I got the hang of the “swirl” on the second try. Put the tip of your knife right down to the bottom of the batter and gently swirl it around. Don’t go crazy or the cinnamon-sugar will just mix throughout the batter … you want that good gooey layer in the middle!

What does Norma say about the Cinnamon Swirl Quick Bread? Norma was still off exploring La Belle Province while this bake took place so I’ll have to share with you my husband’s review … “this is the best thing you’ve baked so far!” Now, that’s a ringing endorsement!
