Have you ever read one of those lists online … it’s miraculous you survived growing up in the ‘70s (or ‘50s or ‘60s)? The list marvels at what we did and ate and yet we survived with wonderful memories. There were no bike helmets. We didn’t wear seatbelts. We ran around barefoot after dark. We ate a lot of sugar and carbs. We played lawn darts. And, we survived … and had a ton of fun!

This recipe is from our favorite guest rooster, Dennis Prodan. And when I think of growing up and having some slightly dangerous fun, I think of summers spent with my cousins. Summers when Dennis first started dating my cousin Cindy. I remember the four of us younger cousins lying on the front of Dennis’s car. We were on our bellies, hanging on to the hood and Dennis would drive around the neighborhood, taking corners fast and we had to try to hang on! I remember bickering about who had to ride on the outside edges! I remember Dennis and Cindy taking six of us kids to Half Moon Lake … yup, eight people all squished in the car, taking turns standing with our heads out the sunroof to get some air. I remember the leaches in that lake!

We had a GREAT time. And if you think this all sounds too dangerous, I can tell you that many of my friends have shared the same experiences. We just had fun creating incredible memories … and, we survived!

Okay, here’s our recipe from Dennis. Cretons is a French-Canadian dish that is served as a breakfast spread. It is really delicious. This is one of Dennis and Cindy’s family favorites that has come out of Quebec … the second being poutine, of course!

Cretons
1 lb. lean ground pork
1 ½ cups whole milk
1 large onion, finely chopped
¼ tsp allspice
¼ tsp ground clove
8 cloves garlic, minced
½ cup fine bread crumbs
Salt & pepper to taste

1. Brown pork and drain well. Add all ingredients except bread crumbs.
2. Simmer for 1 ½ hours, adding small amounts of water as the mixture thickens.
3. Add bread crumbs at the end to thicken the mixture, to the point where it is a good consistency for spreading on crackers or toast.
4. Cool and refrigerate.

Mmm … this does sound delicious! This Chicken is definitely going to give it a try.
