Hello Chickens! Last time I introduced you to my Dad. I want to tell you about his wonderful attitude, which truly continues to inspire me every day. Dad traveled a hard road with his health these last five years, we called him the Energizer Bunny because he just never stopped putting one foot in front of the other.

Each weekend spent with Dad, I searched for a new recipe that’s not too sweet and not too rich and this recipe, from Julianne Johnson of Grove City, Minnesota, is a real winner! Here we go …

Lemon Blueberry Bread
1/3 cup butter, softened
1 cup sugar
2 eggs
3 tablespoons lemon juice
1 ½ cups all-purpose flour
1 teaspoon baking powder
½ teaspoon salt
½ cup milk
2 tablespoons grated lemon peel
½ cup chopped nuts
1 cup fresh or frozen blueberries

Glaze
2 tablespoons lemon juice
¼ cup sugar

1. In a large mixing bowl, cream butter and sugar until light and fluffy. Beat in eggs and lemon juice.
2. Combine the flour, baking powder and salt; add to the creamed mixture alternately with milk, beating well after each addition. Fold in the lemon peel, nuts and berries.
3. Pour into a greased 8”x4”x2” loaf pan. Bake at 350F for 60-70 minutes or until a toothpick inserted near the center comes out clean.
4. Cool for 10 minutes before removing from pan to a wire rack.
5. Combine glaze ingredients; drizzle over warm bread. Cool completely.

Editor’s Note: If using frozen blueberries, do not thaw before adding to batter.

I LOVE baking with lemon zest. It’s amazing how zest enhances the lemon flavor and tastes so fresh. This moist quick bread is loaded with juicy blueberries. I left out the nuts, I just didn’t feel they would be a good fit with the berries and absolutely delicious citrus. And, as you may know about my baking, I often do not add glazes. I didn’t (again!) this time, and I don’t regret it. The bread was sweet enough and didn’t taste like it was missing anything.

To make it even better … Dad loved this loaf. He ate it every day for breakfast ‘til it was all gone, then asked me to buy more lemons so I could make it again. I’ll take that endorsement … and yes, I made more loaves for Dad!
