Today’s bake comes from a home cook who is very special to me. Brielle is a beautiful young woman, the daughter of one my dearest friends. Our two families spent many summer vacations together at a beautiful lake in the Kootenay mountains in British Columbia and so I had the distinct privilege of watching Brielle and her sisters grow up. Brielle has a fun-loving spirit and she is a Mom herself now!
These Oh Henry Cookies are to die for, they are just about the easiest thing to make and a single batch will yield roughly 10 dozen cookies. I love high volume bakes! These are made twice each year: once for summer vacation and once for Christmas. My family has made it clear that I had better run if these aren’t on the Christmas cookie platter ☺.
Oh Henry Cookies
2 bags chocolate chips
1 bag butterscotch chips
1 bag peanut butter chips
1 bag salted peanuts
1 large bag potato chips, crushed
1. Melt the chocolate, butterscotch and peanut butter chips together. I find that if I start by melting one bag and then add a bag ‘til it melts, etc. that I don’t end up with a clump that won’t melt down nicely.
2. Add the peanuts and stir until well-coated.
3. Crush the potato chips. I use ridged chips and I don’t crush them into a dust – you want them to add a good crunch.
4. Make sure the nuts and chips are coated very well.
5. Drop by the spoonful onto a cookie sheet. I always cover my sheet with saran wrap … no clean-up required! You only need a little space between the cookies because they are not going to be baked.
6. Put the cookie sheet in the freezer for 5-10 minutes, until firm and set.
7. Store cookies in the freezer or fridge.
The mixture of the three kinds of chips is really quite perfect. I love the sweet/savory combination with the crunchy and salty peanuts and potato chips. My husband prefers more chips over peanuts and so I adjust the amounts I add. If you love peanuts, you could add more as you like.
