It was a cool and rainy Friday morning and I was on my last day of vacation. It had been wonderful. I was hoping to spend the day outside, puttering in my garden but was secretly happy that I could stay indoors and bake! It was a summer full of BBQs and that day just felt like the perfect day for a warm and hearty pasta bake. Coincidentally, I’d reached the Quick Breads section of our book and found a wonderful sounding savory quick bread – Round Cheese Bread from Deborah Bitz of Medicine Hat, Alberta (another baker who’s closeby).

Round Cheese Bread

1 ½ cups biscuit/baking mix (I used @Bisquick)
1 cup (4 oz) shredded part-skim mozzarella cheese
¼ cup grated Parmesan cheese
½ teaspoon dried oregano
½ cup milk
1 egg, beaten
2 tablespoons butter, melted
Additional Parmesan cheese

1.     In a bowl, combine the biscuit mix, mozzarella cheese, Parmesan cheese, oregano, milk and egg. Batter will be thick. Spoon into a greased 9” round baking pan. Drizzle with butter and sprinkle with additional Parmesan cheese.

2.     Bake at 400F for 20-25 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes. Cut into wedges; serve warm.

The reason I love quick breads is because they’re just that … quick! And this was a very nice change from a baguette or garlic toast. This really has the texture of a giant biscuit. The extra butter and Parmesan drizzle on the top was really great. Gave the bread a nice texture and a boost of flavor.

Did you know … quick breads may be wrapped in foil or plastic wrap and stored at room temperature for up to 3 days. If made with cheese, cream cheese or other perishable foods, they should be refrigerated.

I’m a little biased about bread—especially cheesy breads—I love them! This simple, satisfying bread is perfect on its own to have with soup or salad or with butter and jam as a tea time treat. The texture is soft and slightly crumbly and the parmesan on top gives a nice little crisp.
